Portland Chef Rick Gencarelli brings Lardo’s ruthlessly bold and flavorful approach to The Cosmopolitan of Las Vegas as an over-the-top sandwich eatery. Primarily a pork sandwich shop that uses authentic ingredients made into carefully crafted standouts, Lardo’s menu features such favorites as the Korean Pork Shoulder sandwich, and Lardo’s signature dirty fries, coupled with a selection of Chef Gencarelli’s favorite beers on tap, sourced directly from Portland.
