Vegas is going Vegan?!! This trend is definitely growing and now the Las Vegas Strip has its first 100% Vegan restaurant! “Truth & Tonic” is located on the 4th floor of the Venetian. This modern & sleek wellness cafe is a perfect sidekick to Canyon Ranch Spa & Fitness right next door.

I got a chance to hang out in the kitchen with Executive Chef Pete Ghione as he whipped up some delicious and healthy dishes like black bean hummus toast, caramelized cauliflower “Just Eggs” Frittatas, and grilled portobello tacos. Truth & Tonic also features a coffee bar, a juice bar, along with a “bar” bar with wine, mimosas and mojitos, I can’t wait to come back here this summer and get some drinks and “healthy” snacks poolside!
